Mediterranean pasta salad

With this Mediterranean pasta salad everyone likes to grab it. The recipe has something to offer for every taste.

Ingredients for 4th Servings

250 G Pasta (penne)
250 G Cherry tomatoes, halved
125 G Sheep’s cheese, in small cubes
100 G Olives, black with stone
1 Pcs Onion, diced

Ingredients for the marinade

2nd Pcs Garlic, crushed
2nd EL Parsley, chopped
2nd EL Basil, chopped
120 ml Vegetable soup, instant
4th EL Lemon vinegar
5 EL olive oil
1 prize salt
1 prize sugar
1 prize pepper

12 min. cooking time


  1. For the Mediterranean pasta salad, first cook the pasta in salted water “al dente” and rinse under cold water.
  2. For the marinade, mix the cooled soup well with the olive oil, lemon vinegar, spices and herbs and mix in with the pasta.
  3. Then add the remaining, finely chopped ingredients (cherry tomatoes, olives, sheep’s cheese and onion) and leave the pasta salad in the fridge overnight.
  4. Fold in a little soup and olive oil before serving, as the liquid is completely drawn into the pasta.
