- For the Mediterranean pasta salad, first cook the pasta in salted water “al dente” and rinse under cold water.
- For the marinade, mix the cooled soup well with the olive oil, lemon vinegar, spices and herbs and mix in with the pasta.
- Then add the remaining, finely chopped ingredients (cherry tomatoes, olives, sheep’s cheese and onion) and leave the pasta salad in the fridge overnight.
- Fold in a little soup and olive oil before serving, as the liquid is completely drawn into the pasta.
